Posted on April 23, 2021
Without a lot of effort, this dish delivers the original umami to your mouth.
Porridge is generally easy to make and is also a great match with all kinds of seafoods - not just crab. You can add shrimps, scallops, clams, etc. Adding different kinds of seafoods brings different layers of umami and freshness.
Pro tip: if you want to add more flavor, try adding some sliced pork - you won’t regret it.
Ingredients
1.5
cups rice
8
cups water
1
whole crab
1
tbsp white pepper
1
tbsp salt
5-6
shrimp
optional
spring onion
optional
Steps
- Step 1: Let’s make the porridge with pure rice first.
- Step 2: Get a big deep pot without any water.
- Step 3: Put in all the rice, stir it gently with low heat for 4-5 minutes. This step is pretty important to render the smell directly on the rice.
- Step 4: Pour all 8 cups of water in the pot under high heat.
- Step 5: Stir the rice gently while waiting for water to boil.
- Step 6: When it’s boiling, keep gently stirring the rice for another 5 minutes until the water becomes white.
- Step 7: Turn to low heat and cover the pot - let it cook for an hour. However, you should keep gently stirring the rice for every 10 minutes.
- Step 8: Split the whole crab into pieces that you desire. You can either remove its shell (or not). It’s your preference.
- Step 9: Within an hour, the porridge should be completed.
- Step 10: Turn to high heat and put in all the crab pieces and optionally, the shrimps.
- Step 11: Before presenting to the table, put in all the seasoning (white pepper, salt).
- Step 12: Profit!
