Beef Stir Fry w/ Black Pepper Sauce

A classic Hong Kong style stir-fry dish!

It’s fairly complicated and tedious to make it at home. I make it only when I really wanted some guilty pleasure.

Ingredients

  • 10 

    ounces Beef tenderloin

  • Potato

  • Red pepper

  • 1/2 

    Onion

  • tsp Rice Cooking Wine

  • tsp Black pepper

  •  

    Salt

  • tsp

  • tsp Oyster Sauce

  • tsp Soysauce

  • tsp Sugar

  • tsp Potato Starch

  • 1/2 

    tsp Vegetable Oil

  • 1/2 

    tsp Honey

Steps

  • Step 1: Dice the beef into blocks
  • Step 2: Marinate the tenderloin with salt, black pepper, 1tsp suger, 2 tsp soysauce and 1/2 rice cooking wine. Mix them all together in a bowl.
  • Step 3: Add 2 tsp of water into the beef, rest the beef for at least 20 minutes
  • Step 4: Peel the potato and dice it into blocks, at the same time boil a pot of water
  • Step 5: Put the diced potato into boiling water and cook it for 2 mins. After 2 mins, take out the potato and dry it out with paper towel.
  • Step 6: Chop the onion and dice the red pepper
  • Step 7: To prepare the sauce, mix 1tsp oyster sauce, 1 tsp soy sauce, 1tsp of sugar, a pinch of salt and 1 tsp of water
  • Step 8: Dry out the beef with paper towel
  • Step 9: Mix the potato starch with 2 tsp of water and put it into the bowl with beef
  • Step 10: Put in 1/2 tsp of oil and mix it with the beef
  • Step 11: Deep fry the potato first with hot oil until the potato turns golen and crispy
  • Step 12: Take out the potato and turn on the high heat until the oil is hot again. Put in the fried potato for 30 seconds to make it even more crispy. Take out the potato.
  • Step 13: Deep fry the beef tenderloin in hot oil (about 200 °C/400 °F) for 20 seconds. The beef dices should look crispy as well.
  • Step 14: Prepare a clean frying pan on the high heat. Stir-fry the chopped onion and red pepper for 1 min.
  • Step 15: Add 2 tsp garlic paste and keep stir-frying for 30 seconds
  • Step 16: Add 1 tsp of black pepper in the pan. Keep stir-frying.
  • Step 17: Add the deep-fried potato and beef tenderloin. Mix them all together.
  • Step 18: Add the sauce and black pepper sauce (optional). Mix everything on the pan for 10 seconds.
  • Step 19: Turn off the heat. Optionally you can add 1/2 tsp of honey. Do not add the honey when the heat is still on otherwise it burns the honey.
  • Step 20: Finally done!
