Beef Chow Fun

It’s a common dish found in most Cantonese restaurants. However, it’s not a dish that’s easy to make, regardless of the simple steps.

Normally in the US, it’s not easy to get the wide rice noodles unless going to the asian grocery stores.

If you can get it and want to make this dish, the key is that it must be done over a high flame and the stirring must be done quickly.

Ingredients

  • 200 

    g Sliced Beef

  • 200 

    g wide rice noodles (Hor Fun)

  • 50 

    g Sliced onion

  • 50 

    g Bean Sprouts

  • 40 

    g Chives

  • teaspoon soy sauce

  • teaspoon oyster sauce

  • 0.5 

    teaspoon sugar

  • 0.5 

    teaspoon salt

  • tablespoon dark soy sauce

Steps

  • Step 1: Slice the beef into thin pieces (against the grain)
  • Step 2: Marinate the beef with soy sauce, oyster sauce, sugar, salt. At the end, mix some oil in so that it doesn’t stick together.
  • Step 3: Rest the beef for at least 20 minutes.
  • Step 4: Sear the beef in a hot wok until it turns crispy on the outside. Take the beef onto a plate.
  • Step 5: Empty the wok, add some oil, sear the rice noodles with high heat. Do not mix the noddles too strongly or it breaks apart.
  • Step 6: When the rice noodles turns crispy on the outside, add onion and mix.
  • Step 7: Add the beef and mix them all gently.
  • Step 8: Add dark soy sauce to color the noodles
  • Step 9: Add the rest of the ingredients (chives and bean sprouts) and stir fry for one more minite.
  • Step 10: Present!
